Garbonzo Bean & Sweet Potato Salad

Garbonzo beans among other things are responsible for preventing rapid

increase in blood sugar levels, increase blood flow of oxygen & nutrients

and help to decrease cholesterol. Sweet potatoes contain antioxidants,

which help prevent heart disease and cancer. Parsley helps the body

excrete toxins and can cure an upset stomach.

 

2 sweet potatoes cubed

1 tsp cumin

1/4 cup of olive oil

1/2 cup sun dried tomatoes soaked and chopped

1/4 cup chopped, fresh parsley

1 onion finely chopped

1 cup of presoaked and cooked garbonzo beans

 

Preheat the oven to 400 deg. F.

 

Mix together the sweet potatoes with the cumin and a light coating of

olive oil, place them in the oven until cooked approx. 25 to 30 mins.

While they are cooking sauté the onions in a tbsp of oil. When brown add

the sun dried tomatoes, garbonzo beans & parsley. Cook for a further 2

minutes.

 

Once the sweet potatoes are cooked mix them in with the other ingredients

& lemon juice then serve as they are or over a bed of greens. You can

also add chopped avocado.
