food for airplane travel

I need to get together my husband a nice dinner (that i don't need to

reheat), so he can eat on the commercial airliner.

 

We are GFCF, also soy free. I do have some egg and corn around that

i could use.

 

We aren't big bread people, we never make it except flat bread.

 

Dh prefers food good in it's own right, not food trying to be

something else (i.e. MOCK whatever).

 

I thought of salad with chopped breast of chicken, with a fruit

salad, seeds and nuts???? (but he needs more food probably....and

afraid the lettuce will wilt)....

 

any ideas???

i'm fond of salads with lots of tomatoes, roasted red pepper, etc. garlic,

balsamic vinegar,

olive oil, loads of fresh basil, oregano, and thyme... chickpeas,

cannelini, or navy beans are

good, too.

 

flatbread, carrot sticks, celery sticks with hummus or a nut butter

corn, pinto bean, cilantro, with a pepper-lime dressing

 

salads don't wilt that much, just spin the greens so that they're very dry

and pack the dressing

separately.

 

cold rice pasta previously cooked with garlic, pine nuts, and dandelion

greens (plus crushed

red pepper, salt, and sesame oil)

How do you make vegan, gluten free, mock food free chicken salad?

I use cannalloni (sp) - white italian beans - or white kidney beans and blend

them with avocado, mayo, lemon juice or millet vinegar, salt and pepper, garlic

and green onion.

 

I will be more specific if you like.

oops, forgot that this was the vegan list. dh is not a vegan, but he

does eat gfcf and corn free :)
