Millet Vinegar??

What is Millet Vinegar? I have never heard of this before.

It is also referred to as Nipa Sap Vinegar and comes from the Phillipines. It

is one of the gluten free vinegars I found when I was still concerned about

gluten content in vinegars. The one I have right now has habinero peppers in

it, so it has a nice spice to it but you can get it many different ways. I have

used it for about 3 years now in all kinds baking and cooking. It has a strong

taste (even without the peppers) but it makes great salad dressings.

Most vinegar is made from apples or grapes, so how can it have gluten ?

sawdust or wheat. It contains gluten, or possibly contains traces of gluten

depending on the grain used for the processing, Sylvia. Very little vinegar is

wine or apple based. White vinegar is the kind most likely to have gluten.

The label says Apple cider vinegar. I will check into this further. Do you

have any references ?

Hello again Sylvia

 

What you have is indeed cider vinegar, but you can find vinegars made from all

sorts of things. In fact some of the first was made by wine which had gone

sour, or had been over fermented.

 

I have used apple cider, malt (made from barley), rice wine, red wine, white

vine, pure white (made from wheat or corn), millet (aka nipa sap), and many many

more. I take it you are buying yours from a health food store, not your regular

grocery.

 

Pickles, relishes, mustard and such purchased at the grocery will generally have

been made with pickling (or white) vinegar made from corn or wheat/rye. Heinz

is known to use only corn based vinegars, which is what makes their products

safe for people with Celiac Disease.

 

A quick google search on vinegars will give you lots of sites which explain how

vinegar is made.

 

In fact, one of the things Adventist Prophet Ellen White taught was that

vinegars should be avoided BECAUSE they were quite high in alcohol content in

her day, and many people became addicted to them and damaged their stomachs with

the higher acid content of vinegar dishes. Currently vinegars are usually less

than 4 % vinegar but a century ago, they were as high as 16%.
