Guest guest Posted June 10, 2003 Report Share Posted June 10, 2003 Quinoa Potato Croquettes Source: Vegetarian Cooking School Cookbook 2 cups potatoes, mashed with skins on 2 cups quinoa, cooked 2 egg replacers 1/2 cup onion, chopped 1/2 tsp. salt 1/2 tsp. cumin 1/2 tsp. oregano 1/4 cup parsley, chopped Combine all ingredients, mix well.
