I was wondering what a good gluten-free substitute for oats would be. How could I make gluten-free " oatmeal " cookies, for instance. I personally like to use buckwheat flakes (although the name is misleading, buckwheat is in no way related to wheat, it is actually classified as a seed). I have also seen brown rice flakes for sale. You probably will have to special mail order these, although they can sometimes be found in a health food store. My cookies always turn out great, and even non-GF people like them. Steph, I'm sorry that you now have the " need " for a gluten-free list, but take heart. . .there's alot of good cookin' and eatin' yet even without gluten-filled foods. In my household, I subsitute quinoa flakes for anything that calls for oatmeal. I find it a very flexible food item and it acts in nearly the same way as oats.
