Guest guest
Tofu-Carob Pie Source: Ele G (family friend/another recipe with high reviews!) *This recipe used carob chips and they are difficult to find gf; I think dairy-free chocolate chips would work nicely instead, so I'm passing this recipe along. 2 blocks Tofu (Silken firm) 1 1/4 c. Carob chips 12 tsp. Mint (liquid) Blend tofu till creamy-smooth. Soften carob chips in microwave (they will not melt but be sure they do not burn) and blend in the tofu. Add the mint and blend. Pour in graham cracker crust. An 8 " x 10 " pan works well. Refrigerate until ready to serve.

I don't know the brand, but my local natural store has bulk organic dark chocolate non-dairy chips that are awesome! We just eat them like candy half the time, or melt them for chocolate sauce. We usually put vanilla extract into the chocolate sauce, but isn't there some reason why vanilla isn't GF?

I would love to find some gf carob chips. All I've been able to find so far have malt barley in them. . .making them " off limits " for our gluten free family member. I've been trying to determine how to make this recipe with powdered carob instead. . .still thinking. . . . LaDonna
Guest guest
I think our store carries the date sugar sweetened variety. - Tea Cozy Sunday, November 02, 2003 4:09 PM Re: Re: Tofu-Carob Pie >>>I don't know the brand, but my local natural store has bulk organic dark chocolate non-dairy chips that are awesome! Guest guest
Sylvia, I know that MANY here on Vegan and Gluten Free would be extremely thankful if you could find out the " brand name " of those gf carob chips. Can you call the hfs and ask for information so others could order. It would even be okay to post their phone # so we could order straight from them. Thanks for checking on this for us. Guest guest
Since tomorrow is my day for errands, I will check on it. It is bulk food, is all I know. - Tea Cozy Sunday, November 02, 2003 6:35 PM Re: Re: Tofu-Carob Pie Sylvia, I know that MANY here on Vegan and Gluten Free would be extremely thankful if you could find out the " brand name " of those gf carob chips. Guest guest
In all the running around, I didn't get to that store. I'll try to target that as a Friday chore. I do have a question though. Couldn't a person use date sugar, honey or stevia with the unsweetened chips or are these not vegan and gluten free. I don't really understand all of this, I just collect yummy sounding recipes. The next thing I am going to sell is my cookbook collection. Oh, I just realized, you would have no idea that I am selling out a lot of homeschooling books. I have been diagnosed with Parkinson's and am getting to the point that some things have to go because I won't be using them again. It is a matter of facing reality. - ilovetocookvegan2 Sunday, November 02, 2003 11:17 PM Re: Tofu-Carob Pie Thank you, Sylvia. . .we appreciate it.
