I got some cookbooks, have been lurking on this & other websites and trying to make a decent gluten free bread. Is there a casein free cheese & sour cream substitute out there that isn't awful? As far as casein free cheese, the best we have found is also Toffutti but nothing taste like the real stuff, unless you use the fake stuff with Casin in it. At least that has been our experience. You can make soy yogurt and soy buttermilk with the same active cultures as the dairy versions, then drain or press them to whatever consistency you want, from sourcream to a soft cheese. I think these taste better than the commercial versions that don't have live cultures in them, and they're probably healthier too. I started with a couple spoonfuls of the dairy versions to get the cultures, but then you take a bit from the prior batch to make the next batch, so after several batches there's really no dairy left in it. I'm sure you can find detailed directions on the Internet, but basically it just involves putting a bit from the prior batch into some warm soymilk and letting it sit in a warm place overnight. This gives you a soy yogurt or buttermilk (depending on which cultures you started with) and then you can let it drain through a clean dishtowel or whatever if you want it thicker. I usually use the soy yogurt in recipes as a replacement for milk (either dairy or regular); baked goods seem to rise better when I use it. That said, I'd be really happy if someone could come up with a CF substitute for moldy cheeses like brie or stilton. I'm not aware of any fake cheeses that try to mimic these. Is anyone working on a moldy soy cheese product? (I guess the tofu I left in my fridge too long doesn't count!) Have you signed up for the various GFCF e-mail lists?
