Cruelty Free Crab Salad

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 cups shredded raw parsnips -- (about

1 1/2 pounds parsnips -- untrimmed)

8 green or black olives -- chopped

2 ounces chopped pimentos -- drained

1 cup diced celery

or green bell pepper

1 small onion -- minced

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 cup vegan mayonnaise

 

Combine all the ingredients in a medium bowl. Cover and refrigerate for several

hours before serving.

 

Shells Agli Olio

 

1/4 cup olive oil

2 tablespoon white wine

10 garlic cloves minced

1 cup fresh spinach leaves stems removed torn into small pieces

1 pound cooked shell pasta

 

In a heavy skillet, heat the oil and wine. Add the garlic

and saute for 5 minutes. Add the spinach and saute just

until it wilts. Toss the garlic spinach sauce with hot

shells and serve. Makes 6 servings of 1 cup.

 

 

Vegetarian Bean-Stuffed Cabbage Rolls

1 head cabbage

--sauce--

12 ounces tomato sauce

6 ounces tomato paste

1 cup onion -- finely chopped

2 cloves garlic -- crushed

2 teaspoons sugar

1 teaspoon oregano

1/2 teaspoon basil

1/4 teaspoon pepper

--filling--

1 pound white beans, canned

1 cup onion -- finely chopped

1 cup brown rice, cooked

1 teaspoon oregano

1/2 teaspoon dried basil

1/4 teaspoon salt

1/4 teaspoon pepper

 

Carefully remove 12 large outside leaves from the cabbage. Place leaves in a

large pot of boiling water and boil 5 minutes. Remove leaves from water, place

in a colander, and run under cold water for a few minutes. Drain.

To prepare sauce: combine all sauces ingredients in a small saucepan. Bring to

a boil over medium heat. Reduce heat to medium-low, cover, and simmer 15

minutes.

To prepare filling: place beans in a large bowl. Mash slightly with a fork or

potato masher. Add remaining filling ingredients and mix well.

To assemble: preheat oven to 350 degrees F. Lightly oil a 9 x 13-inch baking pan

or spray with nonstick cooking spray. Divide filling evenly and place each

portion near the base of a cabbage leaf. Roll leaves up tightly, folding in the

sides as you roll. Place rolls stem side down in prepared pan. Spoon sauce

evenly over rolls.

Cover Tightly and bake 1 hour.

 

 

VEGETARIAN MAJADARRA

 

1 c. uncooked lentils

3/4 c. rice

1/2 c. olive oil

4 to 7 onions (to taste)

1 tbsp. salt Salt for onions (optional)

 

Cook sliced onions (optional salt) in olive oil until brown. Wash lentils. Cook

lentils in 7 (or less) cups of water, with salt, for 10 minutes after boiling.

Add rice and cook for 15 minutes. Then add onions and oil and cook for 15

minutes more. Liquid should evaporate. More time may be needed. Serve hot or

cold

 

 

 

 

Lentil Pate Wasserman

1 cup lentils -- cooked in 2 cups of water

1 onion -- chopped

4 cloves garlic -- minced finely

6 teaspoons margarine

1 teaspoon black pepper

1/2 teaspoon vinegar

water -- if necessary

 

Cook lentils. At the same time sauté onions and garlic in margarine in a

separate pan. Add pepper. Mix lentils, onions, garlic and pepper together. Blend

in food processor or blender, adding water if necessary. Add vinegar last.

1 1/2 cups boiling water

 

Blend almonds and boiling water together for about 3 minutes at a high speed.

Strain through muslin or cheesecloth. The remaining pulp can be used in

vegetable/nut loaves or burgers. Shake milk well before serving.

1 pound broccoli -- chopped

1/2 pound mushrooms -- chopped

1 small onion -- chopped

1 teaspoon tarragon

3 cups soy and/or rice milk

Salt and pepper to taste

 

Steam the vegetables and onion together for 10 minutes.

 

Blend half of the steamed vegetables in a blender or food processor along with

1-1/2 cups soy and/or rice milk. Pour into a large pot.

 

Blend the remaining steamed vegetables and soy and/or rice milk. Add to pot.

 

Season with tarragon, salt, and pepper, and reheat for 5 minutes over medium

heat. Add water if you prefer thinner soup. Serve warm.

1 pound firm fresh tofu

MARINADE:

1/4 cup catsup

1/4 cup apple juice concentrate

2 tablespoons apple cider vinegar

1 tablespoon reduced-sodium soy sauce

1 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1 pinch cayenne pepper -- or to taste

 

You should begin with very firm tofu; drained and pressed. Tofu should spring

back when lightly pressed). Cut into 6 1/4-inch thick slices.

 

Combine ingredients for marinade. Soak the tofu covered for at least 2 hrs.

 

Bake covered at 350F for 30 minutes; uncovered for 20 to 30 minutes.

3 1/2 cups water

1/2 teaspoon salt

1/2 cup wild rice

1 cup long-grain brown rice

1 teaspoon olive oil

2 tablespoons reduced-sodium soy sauce

1 teaspoon thyme

1/2 teaspoon oregano

1/4 teaspoon black pepper

1 onion -- chopped

3 garlic cloves -- minced

1/2 pound Portabella mushrooms (2 large) -- thickly sliced

4 cups chopped collard greens (about 1/2 lb.)

15 ounces canned cannelini beans -- rinsed

 

Bring water to a boil, then add the salt and wild rice. Cover and simmer 15

minutes. Add the brown rice, then cover and simmer until the rice is tender,

about 45 minutes. Drain off any excess water.

 

While the rice is cooking, prepare the mushrooms. Mix the oil, 1 tablespoon of

the soy sauce, the thyme, oregano, and black pepper with 1/4 cup of water in a

large nonstick skillet. Add the onion, garlic, and mushrooms. Cover and cook

over medium-high heat, stirring occasionally, until the onion is soft and the

mushrooms are browned, about 5 minutes. Reduce the heat to medium and add 1/4

cup of water and the collards. Sprinkle with the remaining 1 tablespoon of soy

sauce. Cover and cook until the collards are tender, 6 to 8 minutes, then stir

in the drained beans. Cover and cook 1 to 2 more minutes. Serve over the cooked

rice.

 

Per cup: 199 calories; 7 g protein; 38 g carbohydrate; 1 g fat; 361 mg sodium

1 large eggplant

1 medium onion -- chopped

10 ounces frozen chopped spinach -- thawed, squeezed dry

1 teaspoon basil

1/4 teaspoon oregano

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/8 teaspoon nutmeg

2 tablespoons whole-wheat flour

2 cups marinara sauce

 

Slice the eggplant lengthwise into 1/4-inch thick slices - one per serving.

Spray a nonstick skillet with cooking spray and cook the first side until it is

slightly browned. Then turn and cook the second side until the eggplant is

tender when pierced with a fork. Set aside.

 

Heat 1/4 cup of water in a large nonstick skillet and cook the onion over

medium-high heat until all the liquid has evaporated. Add 2 tablespoons of water

and stir to loosen any stuck bits of onion. Continue cooking until all the

liquid evaporates again, then stir in 2 more tablespoons of water. When the

liquid has evaporated, add the spinach and seasonings. Stir in the flour and

cook 2 to 3 minutes longer. Set aside to cool.

 

Preheat the oven to 350F. Place a spoonful of the spinach mixture across the

center of each slice of eggplant; then, beginning with the narrow end, roll the

eggplant around the filling. Arrange in a baking dish, seam side down. Top with

marinara sauce. Cover and bake for 20 minutes.

 

Per manicotti (with marinara): 42 calories; 1 g protein; 9 g carbohydrate; 0 g

fat; 40 mg sodium

Shredded - now that's not a term I've seen used before except in the

case of something naturally stringy, such as (sorry, couldn't think

of a veggie option) cooked chicken, where you can use a fork to just

pull away the fibres. So how exactly does one shred parsnips? Grate

perhaps?

this has been one hellava bad week fer fraggle.....

in the process of breaking up with S.O....

didn't get out of bed til 11am yesterday...

room mate problems

and this morning, woke up to find that my S.O. dwarf panda hamster had gotten

out and was set upon by one of the cats..which sux all in of itself, " hey, so,

i know we are nreaking up and all, but, umm, so, yer hamster died " ..so i got to

bury the lil gurl dis morn, in bare feet....

dunno which cat did it...my cat has never really paid attention to her before,

but...cats are cats....

and there were ants all over the kitchen this morning, covered the floor...and i

ran out of peppermint soap to wash the floor with and.....

oh, just lots of little things

gee..i'm rambling.....i'll just sorta stumble over to this here corner and sit

quietly fer a bit....

oh, and as far as i know, parsnips can be shredded with a grater er a food

processor...

Oh Fraggle, come to England, we'll look after you for a while until

you feel better. I know how awful it is about the hamster, I lost 2

out of three gerbils once like that. They're such escape artists.

Loads of affectionate feelings on their way to you.

The ants only came to keep you company.

BTW, apparently on the application to get a US visa you have to answer

So sorry to hear about the hamster. If you ever have another rodent, keep it in the bedroom with you (in it's home of course), then you'll know if it gets out.

Hope you managed to avoid the ants with your big bare feet. I have to watch out for slugs. Every time I go to the kitchen I stand at the doorway, peering around...

And I've got a julienne thingy that would sort-of grate parsnips. If one could be bothered that is!
