Hi, PT! :)

 

When I get those tuna sandwich cravings, I found a wonderful vegan recipe

online that satifies me *totally*! My entire family loves it, too!

 

I prepare this recipe, and serve it on mini whole wheat pita, surrounded by a

huge array of salad (plus some cucumber salad and/or homemade coleslaw)...

I still use eggs and dairy products, but vegan mayo can be substituted, of

course:

Mock Tuna Salad

1 can (19 ounce) garbanzo

beans -- drained and mashed

2 tablespoons mayonnaise

2 teaspoons spicy brown mustard

1 tablespoon sweet pickle relish

2 green onions -- chopped

salt and pepper to taste

 

 

Directions

1 In a medium bowl, combine garbanzo beans, mayonnaise,

mustard, relish, chopped green onions, salt and pepper. Mix well.

NOTES : This is a chickpea spread that tastes like tuna salad! No

kidding! Great served in a sandwich. Prep Time: approx. 20
