Guest guest Posted November 11, 2003 Report Share Posted November 11, 2003 Hi everyone! Thanks so much for inviting me to join. I am an 18 year old college student at Indiana University Bloomington. I recently became a vegetarian at the urgings of my vegan boyfriend. He convinced me that it was the way to go, now, almost two months later, I have no cravings for meat whatsoever, and in fact, the thought of eating it makes me feel semi-ill. Since ending my carnivorous days, I feel much healthier. In fact, I have undergone a complete lifestyle change. I eat healthier, try to exercise (although 9 am classes don't help!) and am glad that I became what I once scorned. As for recipes or other things, I am looking to you for suggestions. Cooking is limited in a dorm, so if anyone has any suggestions for quick easy vegetarian meals, please let me know! Thanks... Guest guest Posted November 11, 2003 Report Share Posted November 11, 2003 hi Jenn, welcome to the group. let me think of some easy recipes. you can get some lightlife fake sliced turkey, chop it up along with some celery and onion, add some mayo maybe a little pickle relish and you got fake turkey salad no cooking even. also try el monterrey bean and cheese burritos they come in ten packs. the best way to eat them is after cooking them cut them up in little pieces since they fall apart anyway and dump your favorite salsa on them and eat them with a fork or spoon. If you have any questions, ask away! ......is a link to our recipes, tips, reviews etc. I'd imagine you are prolly limited to a microwave and mini-fridge (maybe a " boxers " grill)?? Perhaps the " lunchbox " file may help....plenty of wraps and cold salads 'n stuff! I saw that " stay cool " Dave re' to your intro....he always has some nifty throw-it together idears. Umm..yes, cooking is limited to a micro-fridge and a microwave, so I will definitely have to check out the non-cooking recipes. My only issue is that to eat in the food court, which I must do to utilize the food plan my parents bought and would kill me if I didn't use, is that unless you are a carnivore, most of your other options are carbs: bagels, potatoes, pasta. How can I keep myself from a carbo-overload? Oh yeah, by the way, I'm a vegetarian, my boyfriend is Vegan! Yes, being a vegetarian at school is tough - especially if they don't have a lot of options in the dining hall. I was lucky enough to have on caf that " catered " to veggies and offered healthy, nutritional options. Just make sure to stay away from the ginormous peanut butter sandwiches - I put on 15 lbs that way! I'm not sure if you're vegan or veggie, but a quickie meal I often turn to when I need comfort food is Mac N Veg N Cheese. 1 Package Mac N Cheese (I use Amy's Organic, but a student budget might be too tight for that), cut up broccoli and baby carrots. Nuke it and you're done! Also remember that Soup is Good Food. There's lots of vegetarian types out there. A great snack when you need something sweet is some loose granola w/ dried fruits (like cranberry or raisins) in Vanilla Soy Milk. Good luck! -K --- SNIP --- > Hi everyone!
