Roll call and dinner check-in (just for fun)

We haven't done this for a while...

If you want to post who you are, where you are,

what type of vegetarian you are, (if you are one),

and tell us what you had for dinner tonight.

 

PT in Southern Oregon,

~ lacto-ovo vegetarian kitchen goddess! *lol*

Tonight we had a baked macaroni and cheese

casserole and broccoli cuts with vegan

margarine and garlic... nothing else.

Right now I am baking a pan of Tropical Mystery

dessert and it smells divine.

[recipe for tropical mystery should be in the files but

if you can't find it and want a copy I can repost it]

I'm Sheryl. I live in Albuquerque, New Mexico. I am a vegetarian

and aspiring vegan. I haven't been eating eggs for a long time,

don't drink milk, but still eat cheese sometimes. I'm doing real

well not eating it at home, but out in restaurants gets me. For

dinner tonight, I had a veggie burger. It was one of Amy's " Texas

style " on a whole wheat bun with ketchup and mustard and some chips

on the side. I was in a hurry, otherwise I'd have cooked up some

squash I've had here for awhile.

I'm Marie,

 

I'm 57, an Australian who 'transplanted' in 1998 to Haarlem in Holland. We are

ovo-lacto vegetarians. As it is now 5:57 AM I think it's best to tell you what

we had for dinner last night (LOL) - lasagne with zucchini (courgette) and

eggplant (aubergine) together with a big bowl of green salad. If anyone wants

the TNT lasagne recipe just say the word.

I'm Lori. I'm 33, married, work in IT, live in Boise,

ID, USA. I'm a strict vegetarian. I don't eat meat,

poultry, fish, dairy or eggs, and I try pretty hard to

minimize trace animal ingredients whenever possible.

My kitchen is now entirely Vegan.

 

I work nights, so for " lunch, " at 11 PM, I will be

having homemade tofu scrambler over alfalfa spouts,

topped with avocado. I had a big Oriental Salad at a

chain restaurant for lunch at 4 PM.

I'm Megan. Veggie since 7-01. For dinner i had barley salad (see archives from

last few days for recipe) and a chunky " rocquefort " dressing made out of tofu

(recipe from joanne stepaniak's " uncheese cookbook " . And i Live in lost wages,

nevada.

karen, 25, lacto-ovo in Alabama.

left-over soup made from the night before. We had about 3/4 jar of

spaghetti sauce, so I used that for the base along with a can of

veggie broth, 2 zucchinis, 2 onions, 3 cloves of garlic, and 4 small

red potatoes. This was all purreed so the base was kinda thick. Then

I threw in some black beans, corn, carrots, peas, and baby lima

beans. Turned out wonderful and was able to use a lot of what was

just laying around in the kitchen.

 

I just recently purchased one of those hand held blenders so I'm

blending just about everything :P
