" Rather than trying to cook a tofurkey (which would only be eaten by myself and, frankly, I'm not all that fond of...) I have recently started making a baked ziti dish for Thanksgiving. Because this isn't a " wierd " dish, some of my fam will eat it too, which translates into eating less turkey (yeah!). Also, I make the sauce from scratch, so while my mom and dad are in the kitchen making the stuffing and the pies, I can be in the kitchen chopping veggies. Guest guest Posted November 19, 2003 Report Share Posted November 19, 2003 A ziti is a type of tube-shaped pasta. For my baked ziti I boil the noodles in water until tender - usually about 10 minutes. Then I line the bottom of a baking pan with tomato sauce (which usually includes onions, peppers, zuchinni, carrots, garlic, spices). Then I add a layer of noodles, a layer of either blended tofu or ricotta cheese, more sauce, more noodles, more tofu, more noodles, another layer of sauce, and then top it w/either a soy or regular mozzarella cheese. Bake, covered w/ tinfoil, for about 30-45 minutes at about 450 degrees.
