[recipe] Herb-Crumb Potatoes

This is a wonderful recipe, and makes a nice side

dish to serve guests. It can easily be converted to

vegan by using olive oil or vegan margarine in

the place of butter; just make sure the herb bread

crumbs you use do not have cheese hidden in the

ingredient list (I don't think they do but would have

to double check that to be sure). Making your own

herbed bread crumbs is easy enough to do at any rate.

Herb-Crumb Potatoes

 

6 to 8 medium potatoes, peeled

3 tsp melted butter

1/4 cup plain bread crumbs

1/4 cup seasoned garlic and herb bread crumbs [Progresso brand]

1 tsp salt

1/4 tsp pepper

1 Tbs finely chopped parsley

1 1/2 tsp rosemary, finely chopped or crushed

 

Preheat oven to 400 degrees.

Roll potatoes in melted butter, then in a mixture

of the remaining ingredients. Place in a 9x9 inch

baking pan that has been sprayed with non-stick

cooking spray. If you also spray the tops of the

potatoes with Pam or some other brand of non-stick

cooking spray they will bake up nice and crispy-brown.

Cover with foil and bake 50 minutes. Uncover and bake

20 minutes more or until tender.
