It's funny, isn't it? It's nothing *like* cheese, except for having a strong taste and smell and being the right colour for sauces, and yet somehow it satisfies me for those comfort foods I 'need' now and then that have traditionally cheese in them. After a year, I find that I can now make a lasagna, say, as I did a couple of days ago, and top it with a 'bechamel' sauce of thickened soymilk flavoured with various things including nutritional yeast, top that with a crumb mixture (whole wheat crums, ground almonds, two pinches nutritional yeast) instead of parmesan to brown in the oven, and I have all the cheese comfort I need.
