I go out for sushi every wednesday evening to my favorite sushi bar. They make me this wonderful sushi roll we created on our own one night in a brainstorm to come up with a different roll so that I wouldn't get bored with the typical veggie rolls on their menu. The sushi chef has the kitchen cook up several thin strips of eggplant and zucchini in tempura batter. The he puts those along with finely chopped cashews, avocado, and a liberal sprinkle of asian hot sauce. Guest guest Posted January 28, 2004 Report Share Posted January 28, 2004 Well, we fashioned it after this spicey shrimp tempura roll they had on the menu; we just replaced the shrimp with zuchini and eggplant, skipped the mayo-spicey sauce and went straight for the hot sauce bottle. Then the addition of the cashews was just goddamned inspired! I can't take any credit for that part.
