I only remember hearing good things of this product in regards to baking. Hopefully one of our vegan bakers will weigh in on this topic. I do recall a complaint that it is priced a bit high. A while back, on another nice veggie ! group, I found a discussion on it and someone posted a recipe for making your own homemade version of ener-g. Here that recipe (also posted into our files in the Master Mix folder): It looks very useful for those who are trying to avoid eggs in their baking but would rather make their own egg replacement due to the cost of commercial brands. Ener-G Type Egg Replacer 1 cup potato starch 3/4 cup tapioca flour 2 tsps baking powder Mix all well. Store in airtight container. To use: 1 & 1/2 tsp powder + 2 Tbs water = 1 egg. 1 & 1/2 tsp powder + 1 Tbs water = 1 egg yolk.
