Substitutions

I was just looking over a new vegetarian cookbook I got which contains

several Indian dishes containing yogurt, particularly the biryanis. Just

wondering – if I want to make them vegan, can I substitute coconut milk

for the yogurt? Anyone ever tried it?

Also, my son is turning one next month so I will make him the

traditional Black Magic Cake – which calls for 1 cup of buttermilk – can

soy milk be ‘spoiled’ like milk by adding a tablespoon of vinegar?

Thanks~

Wouldn't coconut milk be sweeter than plain yogurt?

I just don't think that sort of sub would work well.

There are some soy yogurts on the market now, and

I have a vegan cookbook that does offer a recipe for

tofu yogurt that I can type up for you if you are interested.

I have not tried it yet, but you may wish to.

Yes, from what I understand you can (not 100% sure though).

The monks in my vegan cookbook recommend a tofu buttermilk

recipe that I can also post if you'd rather do that.

I would be interested in seeing a recipe for that

Black Magic Cake!

We do have a few yummy vegan cake recipes

in our files too:

Hot Fudge Sundae Cake (vegan)

Hershey's Chocolate Cake (has vegan subs)

Easy Vegan Chocolate Cake

I would recommend a soy yogurt. O'soy- it is good, although

expensive. actually i'm not sure if i've ever seen it plain.

coconut milk doesn't have the right consistancy. plus coconut taste

is pretty strong it will make everything taste too much like coconuts.

PT, please post the recipes for vegan buttermilk / yogurt.

Will do. I will try to type them up later today when

I have time and post them to the list tomorrow or

Monday.

I highly recommend that every vegan try to get

their hands on a copy of a 'Simply Heavenly'

cookbook made by that long bearded monk Abbot

George Burke. I know they are a bit $$ and hard to

find, but the recipes in there look wonderful and

they are all vegan. Those monks aren't skinny, so the

food must taste good, too! *lol*
