Chow Mein Noodles 6 Tbs. vegetable oil 3 Tbs. garlic, chopped 8 oz. fresh Shiitake mushrooms, sliced (or 8-10 dried Shiitake mushrooms soaked in hot water for 1/2 hour and drained) 1/4 cup canned bamboo shoots, drained 1 red or orange bell pepper, thinly sliced 1/2 cup green onion, diagonally sliced 1 cup bean sprouts Sauce* 3 Tbs. soy sauce 1 1/2 tsp. sugar 1/3 cup vegetable stock 1 Tbs. sesame oil 3 Tbs. dry sherry or white wine *or use 1/4 cup of Shiitake Mushroom Sauce Cook noodles in 3-4 quarts of boiling water for 3-4 minutes until al dente. Drain. Heat wok or stir-fry pan over high heat. Add in 3 Tbs. oil, garlic, mushrooms, bamboo shoots, peppers, onion, and bean sprouts. Cook until vegetables are crisp. Add bean sprouts last. Set aside. Over medium-low heat, add remaining oil, sauce and noodles. Toss for 1-2 minutes. Add cooked vegetables and toss until well mixed.
