Couldn't even bear to read the wonderful recipes posted and shared by you all here. But now I am on the mend and back to feeling as normal as I ever did. *lol* Just wanted to say hello to any newbies that have joined this week. Also much thanks to Shawn for doing his moderator thing here. To everyone else, I missed reading your posts and thanks for the now wonderful sounding recipes and ideas you have shared. I hope everyone else is healthy and can avoid that terrible virus. My name is Paul, and I am a Sous Chef at a small place in Santa Ana California. We do quite a bit of Vegetarian and Vegan menus at work. We had a tasting menu the other night for a group of 4 that we made especially for them. We have about 6 couples that visit us at least once a month, they will call and let us know they are coming and we will create a three, four, or five course tasting for them. So I am interested as to what I am going to find here as I am always on the prowl so to speak for new ideas! Thank you again, and if anyone has questions, my brain is always available for picking... It's no fun when we feel so bad that even reading wonderful souding recipes makes us sick. This morning I thought I would check in while my honey makes us french toast for breakfast. Last night when we were discussing breakfast, he lamented about the lack of choices in American breakfasts; i.e. pancakes, french toast or eggs and potatoes. It would be interesting to do some research on what other cultures eat for breakfast. Happy Leap Day all! Eggs, in particular, can be prepared a billion different ways. The underrated omelet, the frittata, the crepe. (I'm not a fan of crepes, but I know that a lot of people are.) Steak & eggs was a common breakfast in diners in the early to mid-20th century. Pork chops were also a popular breakfast item. I know that these are meat and thus inedible to us, but I'm just giving examples. I think that really, people have let themselves become far too influenced by what they see in restaurants. (Most places like IHOP want to give you the cheapest food possible, so yeah, that translates to eggs and potatoes and pancakes.) The homogenization of America has reached the breakfast table- people see these things at restaurants and on TV and think that that's what breakfast should be. At my house, we often have vegetarian eggrolls for breakfast. I also often follow the Japanese and have a cup of miso broth.
