Crisco, Ghee, Margarine, oh my!

Hello all :o)

 

 

 

I made my children some (vegan) peanut-butter cookies yesterday with

Mother’s margarine – and they had an awful, somewhat bitter aftertaste

which I attributed to the margarine (OK, so I had a taste!).

 

 

 

Which got me to looking into Crisco, but geez, I never realized how

awful that stuff is!!! Thankfully, I never really used it at all. There

seems to be some debate on whether or not it is even vegan:

So I started wondering about my vegetable ghee (Dalda). How bad for us

is that??? Has anyone ever baked with it? The Dalda brand certainly

doesn’t have the stronger, more pungent flavor that clarified butter

types do (as I recall) – so I thought it might be worth a try.

 

 

 

If all else fails, I guess I can use applesauce, right?

Sorry that happened to you. Yes, you could

always replace the vegan butter with applesauce,

but I have found that in certain recipes it lends

too much sweetness and an apple flavor.

How about trying another vegan shortening?....

I believe the one I have used in the past has

been by EarthBalance, and it came in sticks like

butter, but was white opaque like crisco. It also had

no partially hydrogenated oils. Also, since shortening

and butter are there in to lend smoothness and the

proper texture to the cookie dough, you could try just

adding enough vegetable oil to the dough until you

got the desired " feel " to it. I might try using some

applesauce blended with peanut oil, instead of plain

applesauce in the peanutbutter cookies, and see how

that works for you; might cut down that apple flavor.

I like using applesauce, but find it pairs best with recipes

like spice cookies, spice cakes, gingerbreads and the like.

But cooking is all a matter of taste, so straight applesauce

might be fine tasting to you. Just don't be timid to

play around a bit to find the manner that suits you. *s*
