I am Andre in California, an infrequent poster to the group but lately an avid reader. Last year was my 20th anniversary of being a vegetarian. I've never had a regret, never missed meat (that's a question meat eaters have asked me a lot over the years: don't you miss meat?). So the gist of my lost message was this. I boiled a cabbage I for (part of) my dinner tonight and the results were not too good. Edible, but that's it. Wondered if you all had a really tasty, quick way to prepare cabbage. I am about to conclude that it's just not that tasty of a vegetable... (Maybe it would have come out better if I had had it on St. Patrick's Day, washed down with Guinness?) Guest guest Posted March 20, 2004 Report Share Posted March 20, 2004 ooh, there are so many good ways to prepare it. i like to shred it really thin along with a hard, unripe, green papaya or mango, and mix it with a dressing i make from lemon juice, chili, and a tiny bit of brown sugar (all ingredients to taste). it's also really good stuffed, but it takes some time-- you have to steam it long enough for the outer leaves to soften. once you get those off, continue the process (steaming and peeling) till you get all the usable leaves off. cut the thick stem part of the leaves off and wrap it around your favourite filling-- i like to use cooked bulgur wheat (or brown rice, or the whole grain of your choice) sauteed with mushrooms, onions, and peppers, or substitute veggie ground round for the bulgur, or just add it along with everything else. then top the whole thing with your favourite tomato sauce and some vegan mozzarella cheese (or reg. cheese if you're lacto), and a sprinkle of vegan parm, and bake it until everything is heated through (usually 350 degrees for about 10-15 minutes). hope this helps give you some ideas! melody http://www.melodysmusic.net Quote Link to comment Share on other sites More sharing options...

You basically saute it covered on low heat in a generous amount of butter or margarine until soft, about 15 minutes. Then just salt & pepper. I am approaching my 3 year anniversary since having gone vegetarian, I have been vegan only a few months now. I saute or blanch my cabbage. I usually mix it with other veggies though, I never eat just cabbage. When I saute I like to do a mix of cabbage, yellow onions, kale and carrots. If I'm blanching usually do a mix of yellow onions, carrots, cabbage and broccoli. Both methods are fairly quick, each can be done in under 10 minutes. When sauteeing I use toasted sesame oil, imparts a nice flavor to the veggies. Don't give up on cabbage just yet, it really can be very tasty!! Kimberly Cabbage?
