This list is growing fast and sometimes folks don't feel comfortable posting. It would be nice to take this opportunity during this week to tell us all who you are, where you are living (just general stuff and only what you are comfy sharing), and maybe what you are having for dinner one day this week. WARNING on that last part; if you share what you are eating, it is highly likely that you will be begged to share your recipe! *s* I'll start... I am PT or feral; depending on which ID I am logged in on. (real name: Robin) I live in southern Oregon; grew up in NY and spent some time in Hawaii, but call Oregon home now and can't imagine ever wanting to leave the Pacific Northwest. I am a " careful " lacto-ovo vegetarian. Tonight we are having a quick and easy dinner: Quesadillas and salad; that way everyone can have what they want in them. I'm ova-lacto vegetarian and I try to be careful. Of course, sometimes it's hard when you eat at restaurants and/or eat cheese. When I buy cheese at the store I try to be careful about getting cheeses that are made with non-animal enzymes (no animal based rennet or rennetless). I try to buy eggs only from suppliers who raise their chickens cage-free and without special injections and such things, same for milk from cows although I don't actually use that much milk, just for some cooking. I don't actually drink it. Only drink soy milk. Use soy milk for cereals too. Unfortunately I don't have a clue what I'm having for dinner at the moment. However I did just buy some corn on the cob from Whole Foods. So that might be part of dinner. I live in the SF Bay Area (East Bay/Tri-Valley area) but was born and raised (except for two or three years in Illinois) in Kansas. I'm pretty much lacto/ovo but easy on the lacto and the ovo lol. well for dinner last night I had a patty melt on rye with a trader joes veggie burger, cheese, sauteed onions. yum ooooh how decadent. I also had some spinach bites, I guess they are like spinach nuggets. well that was about it and water and a salad and some ice cream. I've been a vegetarian for about 2 years now, with a few set backs in the beginning. I'm ovo-lacto, but have drastically reduced my dairy intake and I'm very careful with what I buy when I do. I'm trying really hard to cut back/out the cheese but it tends to get into my meals, especially when James cooks! :-) Tonight I'm making something up which will include red lentils, kidney beans, Quorn chik'n tenders, zuccini and carrots and a salad. I'm an avid supporter of labeling GM foods and not buying any product that might be made w/GM foods. Which pretty much means I only buy organic products. Happy cooking everyone! That is just about the last city/town in California in the north along the coast. The weather stays the same mostly all year - btwn 40 -70 degrees. I am starting to get bored with the weather and when my teenage son goes to college I am heading inland for some warmth. Love the beaches and the redwoods so I don't think I will go far but one never knows. I am having tomato/fresh basil soup with some french bread. It is cold and rainy here tonight so I plan on warming my body with some good soup and a large fire. Hope everyone else has a good evening. Haven't had anything exciting for dinner the last couple nights. Spaghetti one night, olive pizza the next. I did have some wonderful Bruchetta (sp) for lunch with some Lentil soup. It was from a new Italian rest that just opened in town. I'm always looking for new ideas to fix. I get tired of trying to come up with different things. I'm Virgil Butler, I'm 39, and an ex-slaughterhouse killer turned activist. I'm " The Cyberactivist. " I live in Pine Ridge, AR on the river, next to the Ouachita National Forest, so I am surrounded by Mother Nature in all Her wonder. We love it here. My wife, Laura (35), and I are trying to build our cabin out of the dead trees that fell in an ice storm a few years back, as well as the ones that the pine beetles killed. We are vegetarian, going on vegan. We only buy the soy cheese, but the only kind available here is Melissa's, which has casein in it. The only eggs we eat come from our own chickens or from those of our neighbor. We NEVER buy any store-bought eggs. That cage-free, or free-range is a crock. I KNOW what that really means, and it don't mean much. We buy organic food when we can, but here in this rural area, there aren't too many choices. We have to drive for well over an hour to get to a health food store, so we just pick and choose carefully at Wal-mart most of the time. We have learned to really read those labels! As most of you know, we also have our own website where I tell stories of animal cruelty, especally those that I witnessed myself at Tyson's slaughter plants. (Check the early archives for the best ones. But be warned, many are very, VERY graphic.) I also have a called Activists Against Factory Farming and a photopage (linked on the blog site and at the group). Unfortunately, that site and my email may go down here in about 3 days, since I can't pay my phone bill. I have scrounged and scraped and busted ass, and gotten together the money for the electric, but I don't think I can come up with enough for the phone in time. I work hard every day there is work, but even with Laura helping me, we only make between $20-$40 a day. We just can't make it on that. I put out an alert on the blog, asking for help, but only one person has responded so far. I don't yet know if it will be enough to save the site. Anyway, I only mention this here because if I can't get it together in time to save my phone and Internet connecion, it may well be quite a while before you hear from me again. I will have to go around to all the groups and change my email status to " no email " if that happens so that the inbox doesn't fill up and start bouncing messages everywhere. On a happier note, I have been asked to speak at a couple of forums this summer, spreading the word about what goes on in those plants of death. That's great, and we are quite excited. They have also talked with me about going on a speaking tour around the country. Also, I was recently interviewed and written up in a French magazine. There's a lot going on behind the scenes that will make a BIG difference if I can just hang on a little bit longer. They are even talking about making a movie out of my life! Big things happening, for sure. But, I have been working so hard lately to earn money that I just haven't had much time for online activism. Now, what we ate last night - garbage soup. Ever had it? I've been a vegetarian for 12+ years, and a " minimalist " lacto-ovo at that. I'm afraid that soy yogurt is a tough sell for me! I also do my best to buy local, organic and GMO-free, and I do have some (strong) opinions about the so-called " healthy convenience " food industry . For dinner tonight: leftover Ybor City Garbanzo Soup with organic brown rice, courtesay of the Moosewood " Daily Specials " cookbook. Yummmm, *so* much better the next day!
