Need a substitution suggestion...

Of all the " ground meat " substitutions I have tried Bocca crumbles is my only

recommendation, it comes in most flavors and varieties. If you have already

tried these, sorry it is the only brand I actually like, and as far as taste

goes it is very comparable.

Hmmm, this sounds really good. I'm not sure if and how long it will

be baked. However...I might try cutting up big chunks of Mexican

zucchini (big and light green in color)...they should absorb some

liquid and keep some good texture, depending on the cooking time. If

you are looking for a less crunchy texture, you may want to put in

some par-boiled (cubed or) chunks of taters. That should absorb some

liquid during bake as well. Or, to get a bit exotic, go with sweet

taters and add some jalps or even chipotles to mix it up. I'd go with

Mexican zukes or (regular) taters for my tastes.

hi sherri,

i'd add corn or hominy. cooked brown rice or pearled

barley might also work well.

just a coupla ideas,

You could try taking some cooked wheat gluten and mincing it up very finely.

I don't know if this will help but I make tamales using yams, sun-dried tomatoes

and black olives and they are real yummy. Maybe you could use yams, chili

peppers, black beans and some spices, instead of the taco seasoning and meat.
