However...I might try cutting up big chunks of Mexican zucchini (big and light green in color)...they should absorb some liquid and keep some good texture, depending on the cooking time. If you are looking for a less crunchy texture, you may want to put in some par-boiled (cubed or) chunks of taters. That should absorb some liquid during bake as well. Or, to get a bit exotic, go with sweet taters and add some jalps or even chipotles to mix it up. I'd go with Mexican zukes or (regular) taters for my tastes. Maybe you could use yams, chili peppers, black beans and some spices, instead of the taco seasoning and meat.
