I liked that it only had 5 ingredients and included nutritional analysis; one could always play around with the ingredient list a bit to suit taste and make it more colorful. When I made this I added some diced green and red bell pepper in the place of 2 of the carrots. Cauliflower Cashew Salad 1 medium head cauliflower, broken into florets 4 medium carrots, halved and thinly sliced 1 cup frozen peas, thawed 1 bottle (8 oz.) ranch dressing 1/2 cup cashews In a serving bowl, combine the cauliflower, carrots, and peas. Drizzle with the dressing; toss to coat. Cover and refrigerate until chilled. Just before serving, stir in cashews. Yield: 8 to 10 servings Nutritional Analysis: One 3/4-cup serving (prepared with fat-free salad dressing) equals 109 calories, 4 g fat (1 g saturated fat), trace cholesterol, 299 mg sodium, 17 g carbohydrate, 3 g fiber, 4 g protein.
