Guest guest Posted April 24, 2004 Report Share Posted April 24, 2004 Thanks for the suggestions I have 3 dozen mini- quiche ready to head to the party tonite - broccoli with 3 kinds of cheddar; marinated white asparatus, scallion, and swiss; plum tomato, red & greem pepper, and pepper jack cheese. Of course, I had to sample one of each and YUM! They're all great. This will be so much nicer than just taking one kind and not giving people a choice. And no one will even notice it's veggie! You guys are such a great resource. Yep, I put the pastry into regular muffin pans, put in the veggies/cheese, and poured the egg mixture over them, then baked. I hate working with pastry, and making the mini-ones is a p.i.t.a, but it was worth it. I was feeling lazy, so I bought premade pie crusts and just rolled them out and cut them down to the right size for the muffin tins. For the broccoli ones, I chopped up broccoli quite small and added some pre-shredded 3 cheddar blend cheese. For the asparagus ones, I chopped up marinated white asparagus, some scallions and some pre-shredded swiss cheese. For the last ones I diced plum tomatoes and red and green pappers, then chopped up some pepper jack cheese (couldn't find it pre-shredded in my local supermarket). I put the veggies/cheese into the pastry shells (uncooked), about 2/3 full, then poured over a mixture of eggs/cream/salt/pepper (I don't measure this, sorry). I tossed them in the oven at about 375 and baked til they looked done, 25 minutes or so. They were really quite easy, other than forming the pastry shells, which is a bit of a p.i.t.a. If you look back in the archives, a couple of people gave me some wonderful suggestions when I was looking for ideas besides my usual spinach/cheddar combination. -- Sherri Arrogance: The best leaders inspire by example.
