I had the veggie tacos with some guacamole added it was really good! We had potato chowder for dinner. One night we had mac and cheese with some crusty bread... with warm weather getting here and all the after school activities, homework and Little League meal times get real interesting around here. I also had 2 grilled veggie sammiches with provolone cheese, green pepper, onion, and japanese eggplant. yeah those sandwiches lol. some canned pinapple slices. Guest guest Posted April 29, 2004 Report Share Posted April 29, 2004 I made some effort last night and cooked up a West Indies-type veggie and bean curry with some leftover canned pumpkin, all served over basmati brown rice. Very yummy, although I'm sure once the leftovers have mellowed a bit, it'll be even tastier tonight! Cheers, Kathy PS: Robin in NC, everything you've had sound fab! Has anyone else here seen that aweful low-carbing one with all the ladies sitting on a rock staring at a cow in a pasture lamenting about what Atkins-ick stuff they ate for dinner? Sort of funny. *lol* I am PT aka feral. I live in southern Oregon with my dh, two children, two cats and two jack russel terrorists. Last night I made some macaroni salad. I had a few scoops of that with a tossed salad and a handful of torilla chips; we've been so busy around here and it was nice and hot outside so I didn't want any warm dinner food. The night before I made a quick pasta sauce and served it over rotini with sauted zucchini half-moons cooked with some sliced green onions. My daughter had a craving for pasta after watching an old episode of 'The Sopranos' and I didn't have any sauce already made, but it is so easy to make a quick delicious fresh marinara. I used a few cans of crushed tomatoes, minced onion, minced green and red bell peppers, garlic, dried herbs, and fginely chopped sun-dried tomatoes packed in oil. I chopped up an onions, a zuccini, some sundried tomatoes, some red pepper, some green beans, and some garlic and sauteed it all with some chili powder and crushed red pepper flakes in just a touch of olive oil. Then I reheated some refried beans I made earlier in the week. I combined the veggies and beans in a tortilla and sprinkled with a little pre-shredded mexican blend cheese. Filling, delicious, and easy. Right now for lunch I'm having a spinach salad - baby spinach, avacado, plum tomatoes, red and green pepper, crushed walnuts, and broccoli, all tossed with a rasberry walnut vinegarette. Tonite is pizza, I think. I made pizza dough and will just thaw that out, top with marinara sauce (left over from earlier in the week), some artichoke hearts, sun dried tomatoes, onions and garlic. A pre- shredded italian cheese blend will finish it off. Again, fast and easy, and oh so tasty. Who needs to eat out? LOL -- Sherri Fighting for peace is like fucking for virginity. I will have to ask my produce guy about it. Where do you live Dave, is it a local thing? Eggplant is my favorite veggie and I would love to have more than one kind. It was a soup that I made from scratch; the dried beans were premixed and I added vegetables and spices according to the recipe that came with the beans. I went by the recipe and it was sort of bland. However, once I tasted it, I added two cubes of vegetable bouillion and a can of crushed tomatoes, and now it is very very good. I made so much that I froze a large bowl of it, and what's not frozen, we'll be eating every day for lunch. I like to cook up a big pot of soup on Sunday or Monday to have for lunch all week. I threw the cooked noodles into my wok with a little organic toasted sesame oil, kale, broccoli, onion, carrots, burdock, bok choy and cabbage.
