very british pudding........

Rice Pudding

It smells SO GOOD when it is baking, it will drive you out of your

mind!

1/2 cup white rice

4 cups soy milk

2 tsp vanilla extract

1 tsp ground cinnamon

Dash of nutmeg

1/4 cup sugar

Preheat oven to 275

 

Mix all ingredients in a bowl and place in a 1 1/2 quart lightly

oiled overproof dish. Bake covered for 3 hours, or until the pudding

sets.

This sounds so good! We went out for Vietnamese food tonight, and I brought

home the leftover rice just to make this dish :)

In India we know something like this as 'Kheer'. In addition to the ingredients

you mentioned raisins, cashew nut, almonds are also added for garnishing and

with the thing is simply yummy.

 

For all you know the Brits would have taken it from India (or maybe given it to

us while they were here).

I've eaten kheer here, and I think it's more thin and liquid than the pudding

described here. Kheer at restaurants here tends to be much more liquid than a

traditional British rice pudding. I like it with raisins or almonds :)

kheer is lovely too, and when we make it we flavour it with rose water, and

i have put pansies on the top before to give it that girlie pudding feel.
