Bean question- What are....

Canellini beans? They are in a recipe I found in the files and would

like to make but even my grandmother doesn't know what they are. She

usualy knows what everything is lol so I was surprised. Anyway we

couldn't find them when we looked at walmart, which didn't surprise

me, so where do you get them? Also what do they taste like? I

thought I would like black beans beacuase I just thought a bean was a

bean but I was in for a surprise. Must be an aquired tast? lol. I

could probably leave the canellinis out of the meal but now I'm

curious about them and feeling adventurous so I want to try them.

Well so long as they aren't a pet name for something really awful

lol. I suppose I could just go down to the health food store (I think

we have one..), but I wanted to ask here first. Ya know just in case

they were misspelled or something, or they were like regular kidney

beans. I try to avoid public blonde moments when I can :)

I believe they are " white " or " blonde " kidney beans. ...nice to look

at. I've used them in soups and chilis...but I generally use them

mixed with other beans so I don't know the exact taste. ...not much

different I assume. I like them and I as well usually just see 1

option down here at the market for those guys.

These medium-size ivory kidney beans are

popular in Tuscany where they are used in

antipasti, soups, and pasta. Nutty, smooth,

and creamy, cannellini bean readily take

up the flavor of strong herbs, and so they

are excellent all-purpose beans. Try them in

warm dishes like Pasta e Fagioli, or take

advantage of their texture by pureeing them

instead of chickpeas for a smooth creamy

homemade hummus.
