Guest guest Posted July 8, 2004 Report Share Posted July 8, 2004 This is what i made for dinner last night. It was sort of a throw together soup from items i had in my pantry. Vegetable Garbanzo and Tortellini Soup 1 medium onion, chopped 3 celery ribs. chopped 2 cups shredded carrots (about 3 large) 1 Tbs. olive oil 2 medium zucchini, chopped 1 cup cut fresh or frozen green beans 2 plum tomatoes, chopped 4 garlic cloves, minced 4 cups vegetable broth 1 can (14.5 oz.) garbanzo beans, rinsed and drained Cajun seasoning to taste 3 cups frozen cheese tortellini Salt & pepper to taste In a skillet over medium-high heat, saute the onion, celery and carrots in the olive oil just until the onions begin to soften. Transfer this mixture to the crockpot and add the next seven ingredients; cook in crockpot on low for 4 to 5 hours. Place the tortellini in a colander and rinse in warm water to thaw. Add them to the crockpot an hour before you are planning to serve the soup. Adjust the seasoning to taste by adding the salt, pepper and any fresh herbs you prefer.
