LOL The name for the process is indeed marinating, I think. Sometimes your post titles make me laugh so hard and other times they make me shudder and go " ew " ... this one suceeded on both counts! *lol* You are incorrect on one point. Sushi is the Japanese word for rice that has been cooked and seasoned with the rice vinegar. Many Yanks and western people confuse this and just call the raw fish or the brined fish sushi. You were correct about sashimi though. i eat sushi and love it, but i don't consume any fish raw or otherwise when i do. Sushi is perfectly vegetarian as long as you tell them to " hold the fish " . My sons considered it a treat growing up and it works well with tempe.
