As to summer squash, I'm baking some right now, (12-15 min) sliced, layered with sliced zucchini and plum tomatoes, and tomato sauce, basil, oregano, with mozzeralla cheese on top. Guest guest Posted July 18, 2004 Report Share Posted July 18, 2004 i love them too, though i have never eaten one at breakfast time. i prefer to have them as a sort of main dish " comfort food " item with a side of mashed potatoes and a salad or cooked vegetable.
