I make what we call “zucchini boats” and they’d work just as well with summer squash. What I do is cut the squash in half lengthwise, scoop out the seeds, and fill the hollow with diced tomatoes, onions, garlic and a variety of herbs. I drizzle it with olive oil and bake it in the oven at about 350 til it’s just tender. (Sometimes I sautee the “stuffing” first, but not always). Everyone always seems to love these and they’re really very simple. Guest guest Posted July 18, 2004 Report Share Posted July 18, 2004 My grams cooked it on the stove often with a bit of water and then seasoned it with lots of freshly ground pepper, salt and butter. Another delicious way she served it was to make a seasoned flour mixture and dredge the summer squash slices in beaten egg, then in the flour and fry them until they are browned on each side. Sort of like fried green tomatoes but with squash; this is so good! Summer squash are like zucchini in that you can do just about anything with them. Try using them in recipes like zucchini sweet bread or cakes and cookies that call for squash or pumpkins.
