Hi!

 

I wanted to share the two best vegetarian/vegan recipes I've made

up... and they both have less than 5 ingredients and take less than

20 minutes. These both make just the right amount for one person, so

you can multiple as needed.

 

 

1.) Quick and Easy Black Beans

- 1 can black beans, drained and rinsed

- 1/2 cup jarred salsa

- Salt to taste

- Chili powder to taste

- Cumin to taste

- Cheese (optional topping)

 

Put the beans in a sauce pan, add enough water so they're covered.

Add salsa, chili powder, cumin, and salt. Cook on high.

Occasionally, take a fork and mash the black beans against the side

of the pot. Cook until there is as much " bean juice " left as you

like. Top with cheese if you like.

 

2.) Easy Asian Tofu

- 1/2 a package of firm tofu

- 1 tbsp canola oil

- 2 pinches flour

- Any of the Iron Chef Brand Sauces (I love the General Tso's)

 

(This recipe is great because it imitates Chinese dishes we can't

eat... These Iron Chef Sauces are vegan.. they're at some grocery

stores and available online... they taste just like what I remember

from before I turned veg... they have general tso's, orange, sesame

and garlic)

 

(You can also bread the tofu with a mix of flour and breadcrumbs, but

it takes more time and an egg). Press and cube the tofu, cook in a

pan on medium low heat with the oil and then

sprinkle with flour until the tofu is coated. Cook a minute or two,

until it starts to brown (for some reason, this easy breading makes

thsi taste so much better). Add about a 1/3 of the bottle of the

Iron Chef sauce and cook until coated and a bit crispy.

Thanks for the idea. I had my grandson over last

night and I made the black beans recipe, but I served

it over rice. YUM! We both enjoyed it very much.

 

Do try it with rice! It's great. I guess you might

even add cooked rice to the pot when you make it to

avoid getting two pans dirty. :)
