My youngest had been pestering me to fix some

scalloped potatoes, but with the weather being

too hot for baking in the oven i thought i would

attempt making this dish in the crockpot. To my

delight it did come out well; i can share a rough

recipe for doing that if anyone is interested.

We had the potatoes with a fruit salad, a tossed

green salad and lemonade. The best part was

being able to eat comfort food without having

the kitchen all heated up.

 

Does anyone else use their crockpot more frequently

in the summer? If so, what sort of dishes do you fix

in it?

i was lazy and went & ordered bruchetta toast from a local raw cafe. :-D

didn't feel like cooking, but man that was the best bruschetta toast i ever had!

Nut cheese, fresh tomatoes, garlic, raw pine nuts! On dehydrated sprouted grain

toast. Yummm!

I don't have a crockpot but I went and bought a

toaster oven for those hot summer days. it doesn't

heat up the place as much the big oven and cools down

faster also. I try to make things in the microwave but

sometimes doesn't come out the way you like

I agree, with the microwave the crispy crunch just isn't there.
