Hello Coco and reptile grrrl;

 

Thank you both for your help.

 

It's much appreciated.

 

 

 

There is so much to learn about all of these things and what one can make with

them etc.....

 

 

 

It tends to get kind of overwhelming for me at times.

 

As for making my own Seitan, the reason why I bought the mix, is, I am not able

to cook from scratch all the time.

 

I have an autoimmune disease, where, it affects the physical side of me and some

days are worse than others.

 

THe reason why I asked about the products out there, like Yves Cuisine and Boca

burgers etc..... is, because, I love the taste and texture of them all.

 

 

 

But, unfortunately, I am not able to have them all the time, because, they are

way too high in salt for me.

 

I am salt sensitive, I am having to watch my salt intake also.

 

I have been trying to make similar things that are out on the market , but, with

wayyyyyyyyyy less sodium in it all.

Do you have CFIDS? I ask because I have CFIDS. Some days are better than

others. On some days, I can't even get out of bed.

 

I've never seen a seitan-making kit. What's in it? I buy raw wheat gluten and

mix mine up from that. If the kit just has wheat gluten in it, then you're

still going to have to do some work- you'll have ot knead the gluten flour

(unless you have a machine tht kneads- oh, how I want one!) and you'll have to

simmer it.

Something else that isn't a meat substitue that I have

come to love and cherrish is Quinoa. I don't know if

you have had it...

It's a grain, almost a cross between rice and cuscos.

I have heard that it is a complete protein, but I

don't care. It's yummy. And it's one of those quick,

easy things to make (quick as in takes 10-15 min to

simmer, but you don't have to do a lot of work)

I am a fan of quick and easy cause I work really long

hours and I have to be able to cook ahead for the

whole week on weekends so I can just reheat or cook

quickly.

 

Simply Lovely Quinoa (from " Garden of Vegan " Bernard

and Kramer)

 

1 small chopped onion (I delete this cause I hate

onion)

2-3 cloves of garlic, minced

2-3 stalks of celery, chopped

6-8 mushrooms, chopped

1 tbsp. olive oil

1 c. quinoa

1 28 oz. (796-ml) can diced tomatoes

1c. vegetable stock

1 tsp. dried thyme

1/2 tsp. salt (I omit this too!)

1/2 tsp. pepper (I just grind a little in)

In a large sauce pan on medium-high heat, saute onion,

celery, and mushrooms in oil until the onions are

translucent. Add quinoa and saute for an additional

minute. Stir in the diced tomatoes (do not drain),

stock, thyme, salt, and pepper. Mix together and

reduce heat to medium-low, cover and simmer 25-30

minutes, or until liquid has reduced (usually only

takes me 15 min...). Makes 4-6 servings.

 

Hope that's something you could try...

Janet,

 

I'll send out that cornbread recipe in a couple of days...the flour I use is

Bob's Red Mill GF All-Purpose Flour. It gives it a more wholegrain taste (not by

much) and I it is healthier than the original recipe which called for cornstarch

and potato starch only.

 

The black bean burger recipe is the How It All Vegan book that I mentioned. I,

too, have had trouble with veggie burger recipes but this one worked fairly

easily and was fantastic!! I doubled the recipe for extras and they didn't last.

:) The recipe calls for bread crumbs but I just added flour until it got fairly

thick in consistency. It took a bit of time but if you double or triple the

recipe and freeze extras, it really makes all the difference.

 

I used to eat veggie lasagna even before I was a vegetarian. We use mostly

zucchini, onions, green and red peppers, and mushrooms. Sautee them just a bit

and layer between noodles. I suggest also sprinkling in some flax seed meal or

something just to add a bit of extra nutritional value. Maybe you can look

through the archives for a dairy and soy free cheese substitute?

 

I also made that polenta pie recipe. It was really good. I added cheese but I am

sure it would taste wonderful without. That one is also in the How It All Vegan.

This book is so fabulous. They even have recipes for natural face creams,

cleansers, etc and tips on how to clean your house chemical-free.
