I don't think I clearly stating I wanted a reply to two of my emails.

Sorry about that.

One was how to properly substitute Soy milk for Cow's milk.

The other was ideas for easy to make, easy to eat party food.

If they are also easy to cook a couple of days before then heat up/

freeze/ cool off that would be wonderful also. I have many from my

Vegetarian Times magazines, but I would have to try those out so

many times for them to work.

I really don't have a reply for your milk question. When I was vegan, I

subsituted soy milk for cow milk all the time and never had any problems. The

only thing I did differently was that I would use plain soy milk for cooking

(unless I was baking something sweet), whereas I used vanilla soy for drinking.

 

What is the specific problem you are having with substituting?

 

Um, I don't know much about party food. Most food parties I attend are potlucks

where everyone brings a dish.

I usually have the problem that the soy milk makes

everything too thick...and I just add some water in

with the soymilk. There is really never a problem with

consistancey for me other than having to thin it out.

 

If you have issues with it being watery, try adding a

wee bit of cornstarch. It thickens things well and

doesn't add flavor that I have noticed, although if

you add too much there probably will be.

 

 

As for a party food - I do a seven layer type dip with

beans, guacamole, salsa, vegan sour cream, soy cheese,

lettuce and tomatoes. Usually goes over well.

You can also do vegan " pigs in a blanket " with some

biscut dough and some tofu pups. Most people don't

notice the tofu pups are such unless I tell them.

Same here. that's why I didn't answer before either. We have used

soymilk for cow milk many times without problems. In fact, as

opposed to being too watery, we found it to be a bit thicker and

creamier. We prefer to use it when cooking, especially for gravies

and sauces because of this. And one of the most popular things we

had as party food at Christmas (with veggies and meat-eaters alike)

were these little " meat " pies made by putting the " meat mixture " into

biscuits and folding them over it before baking. I can get the

recipe from my mother-in-law if this sounds like something you want

to make.
