This is a really nice spin on corn chowder.

i added a few shakes of hot sauce to my bowl.

It is very delicious served with chips and salsa.

 

Santa Fe Corn Chowder

 

1 medium onion, chopped

2 Tbs. margarine or butter

3 Tbs. all-purpose flour

1 tsp. ground cumin

1/2 tsp salt

3 cloves minced garlic

1/2 tsp. ground coriander

4 cups milk

1 package (16 oz.) frozen corn with red and green peppers

1 can (15 oz.) black beans, rinsed and drained

1 1/2 cups shredded sharp cheddar cheese

2 Tbs. chopped fresh cilantro

 

Cook onion in the margarine in a Dutch oven over

medium heat for about 5 minutes, stirring occasionally,

until onion is crisp-tender; add the minced garlic.

Mix flour, salt and coriander in a medium bowl;

gradually stir in milk. Pour in Dutch oven. Stir in

corn and beans. Heat to just boiling, stirring

constantly. Boil and stir one minute; remove from

heat. Stir in one cup of the shredded cheese until

melted. Top each serving with remaining cheese

and the cilantro, if desired.

Yield: 5 servings

Hello,

 

This sounds great. And, I don't have a Dutch oven. Will any ole pot

or pan do, or is it truly a needed tool for this appealing recipe?
