It is very delicious served with chips and salsa. Santa Fe Corn Chowder 1 medium onion, chopped 2 Tbs. margarine or butter 3 Tbs. all-purpose flour 1 tsp. ground cumin 1/2 tsp salt 3 cloves minced garlic 1/2 tsp. ground coriander 4 cups milk 1 package (16 oz.) frozen corn with red and green peppers 1 can (15 oz.) black beans, rinsed and drained 1 1/2 cups shredded sharp cheddar cheese 2 Tbs. chopped fresh cilantro Cook onion in the margarine in a Dutch oven over medium heat for about 5 minutes, stirring occasionally, until onion is crisp-tender; add the minced garlic. Mix flour, salt and coriander in a medium bowl; gradually stir in milk. Pour in Dutch oven. Stir in corn and beans. Heat to just boiling, stirring constantly. Boil and stir one minute; remove from heat. Stir in one cup of the shredded cheese until melted. Top each serving with remaining cheese and the cilantro, if desired. Will any ole pot or pan do, or is it truly a needed tool for this appealing recipe?
