It's also a little perkier and less heavy than some other recipes I have that call for more olive oil. Laura ========================================= Sweet and Sour Tomato Sauce (Salsa Agrodolce) Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds ripe tomatoes, preferably Italian plum, or 2 32 oz. cans plum tomatoes, plus juice from cans 1 tablespoon olive oil 1 1/2 cups onion -- chopped 2 tablespoons Italian parsley -- minced 2 tablespoons fresh basil -- minced 1 tablespoon tomato paste -- if using fresh tomatoes 2 cups water -- if using fresh tomatoes 1 tablespoon honey disolved in 2 tablespoons red wine vinegar 1/2 teaspoon cinnamon 1 teaspoon salt 1/4 teaspoon freshly ground pepper Peel, seed and chop the tomatoes; set aside. In a medium saucepan, heat the oil and saute the onion and herbs gently for 5 minutes, until the onion begins to turn golden. Add all the other ingredients, stir, and cook over high heat, stirring occasionally, for 20 minutes, until the sauce is thick but the tomatoes still have some body. Serve hot or cool to room temperature, cover, and refrigerate.
