This was delicious and easy to make. I love complex spice mixtures like

this. We ate over basmati rice.

Spice-Market Melange of Chickpeas and Cauliflower

 

Serving Size : 2

Amount Measure Ingredient -- Preparation Method

cooking spray

2 teaspoons mild vegetable oil

2 teaspoons black mustard seeds

1/2 teaspoon cumin seeds

1/2 onion -- finely chopped

1/2 head cauliflower -- cut into florets

2 teaspoons ground coriander

2 teaspoons paprika

1 teaspoon turmeric

1/2 teaspoon salt

1 pinch ground cinnamon

1 pinch ground cloves

1 can chickpeas with their liquid -- 15 oz.

1/2 cup crushed tomatoes in puree

1 tablespoon honey

grated rind and juice of 1 small orange

freshly ground black pepper

2 tablespoons cilantro -- coarsely chopped

 

Spray a wok with cooking spray, or use a deep nonstick skillet or

nonstick wok and omit the cooking spray. Place the wok over medium heat

until very hot. Add the oil, then the mustard seeds, and saute until

they start popping. (If the wok is hot enough, this could be almost

instant; if not, it might take 1 to 3 minutes). Lower the heat slightly

and add the cumin seeds and then the onion. Stir-fry until the onion is

translucent, about 3 minutes. Add the cauliflower and stir-fry for

another 2 minutes; stir in the coriander, paprika, turmeric, salt,

cinnamon, and cloves. Stir-fry for 1 more minute. Cover and steam for 3

minutes.

 

Uncover the wok. Add the chickpeas and their liquid, tomatoes, and

honey. Stir to combine, then add the grated orange rind and juice. Stir

well and lower the heat. Simmer just to blend the flavors, 5 to 10

minutes. Taste, and season with pepper and, if necessary, additional

salt. Add the chopped cilantro, stir once, and serve hot, over or with

the starch of your choice.
