I have a nice recipe for black eyed pea salsa I'll post later. Lets see....I always like a nice pasta salad, I have one with a nice curry flavor, I'll post it later too. Guest guest Posted June 15, 2008 Report Share Posted June 15, 2008 Kicked up Salsa Dancing Macaroni Salad 1 Box elbow macaroni cooked drained and rinsed in cold water 1 can Black beans drained and rinsed salsa mayonnaise (veganaise) 1 cup corn 3 stalks celery chopped celery salt black pepper white pepper chili powder cumin powder Paprika Mix salsa and mayo together mix macaroni, black beans, corn, and celery together add salsa mixture stir to combine add celery salt, the peppers, a touch of chili and cumin powders and the paprika mix taste to adjust seasonings. I was a vegetarian a few years ago for about a year. I just wanted to introduce myself and send a salad recipe BLACK BEAN ORZO SALAD 8 oz. Orzo or other sm. pasta shape 2 sprigs fresh parsley, finely chopped 1/4 tsp. fresh ground black pepper 1/2 tsp. ground cumin 1/4 c. prepared Italian salad dressing 1 c. (15 oz. can) cooked black beans, drained 1 c. cooked corn, drained Tomato wedges, parsley sprigs (optional garnish) Prepare pasta according to package directions, drain. In a large serving bowl, combine parsley, pepper, cumin and Italian dressing. Drain pasta and add to dressing along with beans and corn. Mix gently. Cover and refrigerate overnight for maximum flavor. At serving time, garnish with tomato wedges and additional parsley. Serves 4 to 6. You will find other folders in there, and each one has some recipes to get you started out. I am sure our members will be sharing more salads, too.
