What are some of your favorite picnic's to make and take on outings to the park, ball game, outdoor music concert, backyard, road trip(love rest area picnic tables), boating? It will be fun and inspiring, for us all, to see different menus with recipes and hear how you and where you enjoy your outdoor picnic's. Looking forward to your answers. Guest guest Posted August 7, 2008 Report Share Posted August 7, 2008 This salad has always been a hit, you can double it too. I also make potato salad. Thos two salads travel well. Donna " Summer Sunshine Pasta Salad " 8 oz. wagon wheel or bow tie shaped pasta 1/4 tsp. turmeric 8 oz. small pasta shells 1/3 cup olive oil (1 tblsp. extra) 2 cups broccoli florets blanched juice and zest of one orange 2 Tblsp. fresh lemon juice salt to taste Cayenne pepper to taste 1 yellow bell pepper cut into thin strips 1 sm. red onion chopped 1 cup cherry tomatoes halved 1/4 cup sunflower seeds 1 cup canned kidney beans or chickpeas Cook wagon wheels or bow tie pasta in salt water, while pasta is cooking add the turmeric to the water to turn pasta bright yellow. Cook tiny shell pasta in another pot until done. Make sure both pastas are al dente and drain and rinse. Now place them both in large bowl with broccoli and toss with 1 Tblsp. olive oil. To make dressing combine orange juice and zest, lemon juice, salt and cayenne pepper to taste. Whisk in the remaining 1/3 cup olive oil until blended then pour over pasta and broccoli. Add the bell pepper, onion and tomatoes and toss. Chill. When ready to serve toss once and sprinkle sunflower seeds over top. I put them in a plastic container, that way they don't make the bread soggy. Put the Veganaise in a small glass container( I save my pimento jars). Take some frozen Worthington vegetarian luncheon slices. They are usually thawed out by the time we stop to eat at a rest area picnic table. I like to put chips in my sandwiches. We like to use either Whole Wheat Sub Rolls or Ciabatta Bread. Sprinkle veggie with Tony Chachere's Creole Seasoning. Pasta salads, marinated cucumbers, Vegetarian Baked beans with Vega-Links sliced up. Sandwich spreads made with either Fri-Chik into a " chik*en " salad or one I make out of Veggie Hot Dogs. I'll send the recipes. We love to take seedless watermellon, honey dew or Cantalope, that I cut up ahead of time. Sometimes I make up a nice fresh fruit salad. Or we take fruit like banana, plums, peaches just washed and ready to eat. Necterines are wonderful to slice up ahead of time, and stir in a little sugar and lemon juice(keeps them from changing color) and chill in the refrigerator. They release some of their juice by adding in the sugar and that makes it extra good. So good. Great on a slice of vanilla cake or angel food cake. If we are eating on our patio at the table, we often end our meals with a fruit smoothie, that we make in our Vita-Mix. We almost always take a jar of whole (small) or sliced sweet or dill pickles. Or we make my Hot, Sweet and Sour Pickles. Take a pitcher full mint or fruit flavored tea, lightly sweetened. Or some lemonade with lemon or lime slices in it. Whole Grain Bagels, spread with strawberry cream cheese that I make from slicing fresh strawberries and sweetening with sugar. Let sit a few minutes until it starts makes a juice in the bowl. Then using your hand mixer, blend it with cream cheese. Or you can make a herb flavored cream cheese, by using your hand mixer to add in some dill weed, minced dried onions, lemon pepper, rosemary, and chives. Celery stuffed with crunchy peanut butter or cream cheese is yummy. Fruit crisps are also good to bake ahead of time and take. Develed eggs are really good. All the stuff to set out for making Mexican Haystacks. I love trail mix. I see I'm really going to have to find a local place to try Worthington products, everybody seems to like them. My specialty to take to BBQs is deviled eggs -- easy and cheap.
