Donna sent me a box of Falafel mix and the brand was Casbah. It was very

tasty and so quick to make up and fry into patties. You just add water to

it.

I cut pita bread pockets into two halves and we stuffed them with a patty,

some onion and tomato slices and fresh spinach leaves. It would have been

good with some alfalfa sprouts in it, but our store was out of them. Then

we added a homemade Yogurt Sauce I made from a recipe on the box. It had a

nice taste to it and was low in calories.

Yogurt Sauce

2 c. Plain Yogurt

1/2 c. finely chopped cucumber

2 T, finely chopped onion

1 t. dry mint

1/2 t. salt

1 garlic clove, minced

Blend together

Enjoy,

Judy

Falafel is one of my favorite foods! Whole Foods now sells some made-up

falafel in a refrigerator section that's really good. I had some left over

last night, and my three parrots really enjoyed it!

I like to eat falafel by itself, just dip it in hummus. Also, hummus adds

some moisture to falafel sandwiches. Good stuff. :)
