Ideas for vegetarian meals - Barbra

Hello Everyone,

I am new to the group and am interested in becoming a vegetarian. I keep

telling myself I am going to stop eating meat, but I don't know where to start.

I can do salads for lunch, but what do you make sandwiches out of as far as

meat substitutes....I have never seen a vegetarian substitution for lunch

meat.

I pack my husband a cooler every day.  His favorite is the vegetarian turkey

substitute - either LightLife or Tofurkey.  Each slice is very low calories.  I

put Nayonnaise on 1 side of rye bread and mustard on the other.  I also add

cheese, lettuce and pickle sandwich toppers.  I also pack some baby carrots,

fruit - plum, grapes, whatever is in season and some pretzels.

 

I've never been a sandwich eater so I put some refried beans in a tortilla with

some mushrooms and shredded carrots for my lunch.  Or peanut butter on a whole

wheat pita.  Nice and easy.

There are lots of vegetarian substitutes for lunch meat. SmartLife and Yves

are two companies that make some pretty good fake turkey lunchmeat. (I have

the fake ham but haven't tried it yet). Whole Foods will definitely have

these, and some local grocery stores will, too -- depends on where you live.

In Kansas, Missouri, and Iowa (at least), HyVee has a great Health Market

section with lots of frozen and refrigerated vegetarian " fake meats. " Almost

always, if you can find a regular grocery store with a good health food

section, it will be cheaper than Whole Foods.

 

I usually bring salads, soup, and frozen meals to work for lunch. Lean

Cuisine, SmartOnes (Weight Watchers brand), and Healthy Choice all have

options without meat. My favorite is Healthy Choice's tomato basil mozarella

panini sandwich. (But the SmartOnes cheese pizza has gelatin in it). Healthy

Choice has a great vegetarian vegetable soup (canned soup). One of my

favorite things to make to take to work is mock tuna salad -- there are a

couple of different recipes for it in this group's file -- mine uses

chickpeas (garbanzo beans) instead of meat.

 

Amy's Kitchen is a brand of frozen foods that is all vegetarian (and a lot

of the choices are vegan). They run about $4 for single serving meal, but

they're really good -- and so much better for you than fast food! They're

great calorie- and fat-wise, too. Amy's makes good frozen pizzas,

too. Health food stores carry Amy's, and some grocery stores will carry a

limited selection.

 

Boca now makes a fake chicken patty on a bun with cheese that you can

microwave. Morningstar Farms stuff is good, but it can be kind of high in

sodium and/or calories.

 

My personal favorite " fake chicken " is Quorn's naked chik'n cutlets. They're

in an orange box, found in the health food freezer section. There are four

pieces, and the box runs around $5.50. Sounds kind of high, but not when you

compare it to meat. I like the fake chicken because I can put it in

casseroles instead of chicken -- I can make the food I grew up on, meatless!

 

By the way -- welcome to the group! I was looking for a good meatless hot

dog (had tried 3 or 4) and found one -- these people know good food! :) (the

best hot dogs are Worthington, which come in a red can -- I know, hot dogs

from a can, sounds weird, but they're good!)

Hello,

 

 

Start small,

BLT? substitute bacon, with zucchini,

ZLT, Bread, Lettuce, Tomato, Zucchini ( cut length ways )

dont like raw Z?

cut it up, warm up in pan, with Italian Seasoning / Olive Oil.

MMMM warm.

 

Pita bread makes good lunch,

I would buy the fancy salad bag, a thing of hummus, and some pita

bread. Add grated carrots, onions, just about anything would work.

Hi--I'm new to the group, was reading old posts and thought I tell

you what I take when I pack a lunch. I use pita pockets, put spread

hummus all around the inside, put in lettuce, and then I add whatever

veggies I have. Sometimes I just put other leftovers from the night

before in the pita pocket--anything that is good without heating.

Using the pita pocket makes anything easy to carry with you, just

don't over fill or it gets messy. I've learned that the hard way.

Hi Barbara. Welcome to the group. In answer to your problem, one can

purchase soy meat.This is a good substitute, but there is a far better idea.

It is called imagination. Be creative. Try roast vegetables in a wrap, pita

or on bread. ow about sliced raw vegetables and fruit. Use your salad ideas

and modify them for sandwiches. There is so much that you can do, and the

only ingredient required is imagination!

Hi Barbra,

We love the Worthington Luncheon " meats " . These vegetarian alternatives come

frozen and are found in most health food stores, but the Health Food Stores in

the Adventist Book Centers, which are worldwide, will have the best selection of

these.

 

These vegetarian flavors they come in are

Wham - which like Ham

Bolono - like balony

Turkee - which is like turkey

Chicken - which is like chicken

Smoked Beef -

Corn Beef
