Quorn Broccoli Salad for 2

 

1 1/2 cups diced Quorn roast (great recipe for using up leftover Quorn)

1 1/2 cups fresh broccoli florets

1/4 cup chopped red onion

2 tablespoons salted sunflower kernels

2 tablespoons golden or black raisins

1/3 cup mayonnaise or Veganeasise

1 scant tablespoon sugar

1 tablespoon red wine vinegar

(garnish with soy bacon bits if you like)

 

In a bowl, combine the first five ingredients. Combine the mayonnaise, sugar and

vinegar; add to Quorn mixture and toss to coat. Refrigerate until serving.

Serves 2.

Good point -- I live by myself and rarely have any leftover Quorn!!! :)

 

Weird thing... I went to Whole Foods the other day and found that the

Quorn naked chikn tenders were $1 less than at my grocery store!! And I

thought Whole Foods was more expensive on everything... taught me to shop

around!! :)

Yeah, I often have leftovers when I make a roast.

I am the only vegetarian at my house, so when

we make a nice big family meal, they all eat meat and I

eat my sliced quorn roast. I can only eat one or two

slices along with all the other great vegetarian side

dishes, so I have plenty of quorn roast to use in

other recipes.

When I don't have leftover quorn roast, I like to buy

the bags of the quorn tenders; they work equally well

in recipes that call for leftover quorn roast. :)
