Guest guest Posted January 3, 2009 Report Share Posted January 3, 2009 i learned a good lesson today. all this time i been half scared of the vegetarian thing because of all the hard to make recipes i see. just yesterday i had to make dinner in a hurry. only half an hour. so i just got out a pile of veggies..(what ever caught my eye) and some whole wheat pasta and made the best dinner! throw some mozzerella cheese and cilantro and italian seasoning in there and they LOVED it! just all baked up in the oven! sure makes me less nervous about the choice i made to try living vegetarian. Cooking delicious food is so simple with just a few yummy vegetables and a touch of imagination. Also being creative and expermenting as you did below will become easier and easier. Great story. One of my favorites in a home made pot pie. I use ready to bake pie crust, throw in whatever veggies sound good, a can of mushroom soup or other cream soup, top with bread crumbs or whatever and bake. Easy and quick!! I'm glad you are becoming less nervous about your choice to become vegetarian.
