Guest guest
Instant Refried Beans 3 cups dried beans 3 tsp. dried cumin 3 tsp. chili powder 1 tsp. salt pepper 3 T. dried minced onion In a coffee grinder, food mill or blender, grind beans until a flour consistency. Combine all ingredients and store jar or Ziploc bag. To Use: 3/4 cup mix 2-1/2 cups boiling water Mix with a wire whisk until combined. Bring to boil, cover, reduce heat to low and simmer for 4-5 minutes or until thickened. Mixture will thicken more as it cools. Refried beans will remain thickened even when reheating. You can add salsa or chopped chili peppers for added zip.
Guest guest
I tried it using dry beans and wasn't wildly impressed because even in the food processor not all the beans ground well enough to make bean flour when I used pintos. Garbanzo's may grind more finely, since I use garbanzo bean flour in a couple of recipes (Hummus is yummus). I didn't try my coffee mill since nothing but nothing is going to go in that and possibly adulterate the flavor of my full city roast coffee beans! (My personal exhorbitant luxury item is good coffee and good tea.) I do buy refried bean powder from several sources and it works well - nothing near the instant promised but still worth keeping on hand. It's great for thickening soups, too. Thinking about it, the beans would probably grind more finely if roasted a bit in the oven. Hmmm...if I have time today, I'll try that.
