I grew up with stuffed dates as a special Christmas treat. 1 - Take pitted date. 2 - Slit the side and stuff a walnut chunk in there. 3 - Roll the whole thing in granulated sugar. 4 - Place in a bowl. 5 - Make another one and eat it. 6 - Repeat until you have a least a few in the bowl for everyone else! Guest guest Posted March 16, 2008 Report Share Posted March 16, 2008 Hi Robin, We make smoothies with bananas, soy milk, ice and dates - but you could also just add dates to any smoothies and it'd probably be good. You can puree them and use as a sweetener in baking. (You probably want to research that a bit more since I know they also affect baking in other ways - maybe as a replacement for something? I can't remember, sorry!) My grandmother used to roll dates in coconut and powdered sugar, and stuff them with walnut halves - delish! And you could just chop them up and bake in bread or cake or muffins or cookies, if you really don't like the flavor - that might mask it a bit. I blend about 20 dates with 1 cup of flour. 20 dates equals about 1/2 sugar. Seriously, though, I think there's some kind of a cookie you can make, it's a no-bake/raw one. I don't remember what it's called, we had them at one of our vegan potlucks, and they were really amazing - I think some maybe even had cocoa powder in them? I'll see if I can find something more specific for you. I also found a recipe for banana date sconoes in the Veganomicon (I made the berry ones instead because we had more of those). There's a recipe in " Disease-Proof Your Child " by Dr. Joel Fuhrman, which unfortunately I have loaned out to someone right now -- but it's very simple. He calls them Date Nut Pop'ems, or something like that. Grind up some nuts, what ever kind you like, until they're nice and fine. Throw in the fresh dates (pitted) and blend until they are all mixed together and form a stiff dough -- roll into balls, and enjoy. You can just add the dates one or two at a time until you have a consistency you can roll. You can add some cinnamon or other spice, a splash of vanilla if you'd like, roll it in coconut or cocoa if you'd like... very customizable. There aren't many recipes available on Dr. Fuhrman's site without a subscription, but the first one on his public list calls for 6 dates: http://www.drfuhrman.com/library/recipes.aspx He uses them a lot as a sweetener and/or binder. It was fabulous! I didn't grind it fine enough to roll into balls, as I'd been aiming for, but I ended up putting the mixture in pancakes, vanilla yogurt, smoothies, and bowls of cereal/soy milk and each was really tasty. You can also stuff them with cream cheese that you've added some chopped nuts to. Dates are loaded with potassium and fiber. It is a nice pack of nutition that takes very little time to make up.
