I grew up with stuffed dates as a special Christmas treat. 1 - Take

pitted date. 2 - Slit the side and stuff a walnut chunk in there. 3 -

Roll the whole thing in granulated sugar. 4 - Place in a bowl. 5 -

Make another one and eat it. 6 - Repeat until you have a least a few

in the bowl for everyone else!

 

Now, being in CA, land of dates, I get them and the stuff the walnut

in, but don't bother with the sugar.

Hi Robin,

We make smoothies with bananas, soy milk, ice and dates - but you could

also just add dates to any smoothies and it'd probably be good. You can

puree them and use as a sweetener in baking. (You probably want to

research that a bit more since I know they also affect baking in other

ways - maybe as a replacement for something? I can't remember, sorry!)

My grandmother used to roll dates in coconut and powdered sugar, and

stuff them with walnut halves - delish! And you could just chop them up

and bake in bread or cake or muffins or cookies, if you really don't

like the flavor - that might mask it a bit. I would think you could

also freeze chopped dates - if the 3-lb tub gets to be overwhelming.

You could always wizz them around in a procesor with chocolate or carob

powder! uh...we call that brownies! LOL

As use them as a sweetener in cake and muffin recipes.

I blend about 20 dates with 1 cup of flour. 20 dates

equals about 1/2 sugar. You can add a bit of stevia

too if it's not sweet enough and have sugar free

treats!

A FABULOUS smoothie can be made with pitted dates (soak them in hot water if

they're not the " meaty " kind), orange juice, and a frozen banana. For a

little extra sumpin', put in a little cashew butter. We love smoothies this

way.

You can send them to my son, he loves them, maybe more than anything. LOL.

 

Seriously, though, I think there's some kind of a cookie you can make, it's

a no-bake/raw one. I don't remember what it's called, we had them at one of

our vegan potlucks, and they were really amazing - I think some maybe even

had cocoa powder in them? I'll see if I can find something more specific for

you.

I also found a recipe for banana date sconoes in the Veganomicon (I made the

berry ones instead because we had more of those).

Otherwise, I'm not sure other than chopping them up and using in whatever

baking things where you'd use raisins or something.

Fresh dates make a great binder. There's a recipe in " Disease-Proof Your

Child " by Dr. Joel Fuhrman, which unfortunately I have loaned out to

someone right now -- but it's very simple. He calls them Date Nut

Pop'ems, or something like that. Grind up some nuts, what ever kind you

like, until they're nice and fine. Throw in the fresh dates (pitted) and

blend until they are all mixed together and form a stiff dough -- roll

into balls, and enjoy. You can just add the dates one or two at a time

until you have a consistency you can roll. You can add some cinnamon or

other spice, a splash of vanilla if you'd like, roll it in coconut or

cocoa if you'd like... very customizable.

 

There aren't many recipes available on Dr. Fuhrman's site without a

subscription, but the first one on his public list calls for 6 dates:

He uses them a lot as a sweetener and/or binder. My whole family loves

to eat fresh dates plain as well.

I have vague recollections of have a date milk shake at my grandparents house in

the desert when I was small. I will definitely try this, thanks!

use them to make a crust for raw pie. It's the best!

 

Grind 1.5 cups dates and 1.5 cups shredded coconut in food processor.

Press into a pie pan.

 

chocolate filling:

- 4 ripe avocados

- 1 cup agave

- 1.5 cups raw cocoa powder

- 1 cup coconut oil

blend together until smooth. put in crust and chill overnight.

 

coconut filling:

- meat from 3 young coconuts

- 1.5 cups shredded coconut

- 1 cup agave

- 1 cup coconut oil

blend together (will be a little chunky). put in crust and chill

overnight.

I did something like this first idea a few weeks ago, but also added oats, flax

seed, sunflower seeds, and other dried fruit. It was fabulous! I didn't grind

it fine enough to roll into balls, as I'd been aiming for, but I ended up

putting the mixture in pancakes, vanilla yogurt, smoothies, and bowls of

cereal/soy milk and each was really tasty.

I just buy pre-shredded coconut but a cheese grater or food processor

would probably work on fresh.

I haven't looked for a long time, but it seems to me that the shredded coconut

was chemically treated?

A really delicious way to enjoy dates, is to take whole pitted date, slice them

down thru the center, almost all the way thru and then stuff them with whole

almonds, walnut or pecans halves. You can also stuff them with cream cheese

that you've added some chopped nuts to. Dates are loaded with potassium and

fiber. It is a nice pack of nutition that takes very little time to make up.
