Less Fat Egglant Solution...

Eggplant soaks up oil like a sponge so what I do to compensate and make the

eggplant have less/ or no fat is to cook it in Vegetable broth in a frying pan

with a lid. It comes out tasting great and has little or no fat.

Found this out while making an Eggplant and Mushroom pasta sauce. It worked

great.

That's great! That's exactly what my problem is with

anything other than breading it....(don't want to use egg, milk and wheat)

and why I don't like it...feels like an oil bomb.

You'll find that if you saute the eggplant with other veggies, especially

onions, tomatoes and squash, they add enough moisture that the eggplant will

need very little oil. Adding a little sprinkle of salt will release some good

moisture for all the veggie. Sometimes I just spray the veggies lightly with

the cooking spray. Just cover the skillet/frying pan, stirring occasionally

and they will cook up nice and tender. You can saute them in a tsp of oil,

Smart Balance Light, or a little vegetable broth. You'll need more if you have

a lot of veggies.
