Serve with BBQ sauce, ketchup or mustard. We also had Bush Baked Beans with sauted onions, sliced up Worthington Vega-Links and then heat up together.. Guest guest Posted October 15, 2009 Report Share Posted October 15, 2009 We didn't exactly have a quick dinner, but here's what we had: Crockpot Black Bean Stuffed Peppers, sauteed green beans, corn, salad. The recipe for the stuffed peppers is below: Crockpot Black Bean Stuffed Peppers Nonstick cooking spray 1 medium onion, finely chopped 1/4 teaspoon cayenne pepper 1/4 teaspoon dried oregano 1/4 teaspoon ground cumin 1/4 teaspoon chili powder 2 cans black beans, rinsed and drained 4 tall green bell peppers, seeded and cored 1 cup (4 ounces) shredded reduced-fat cheddar cheese 1 cup mild salsa Spray medium skillet with cooking spray. Sauté onions until golden. Add cayenne pepper, oregano, cumin and chili powder. Remove from heat. Mash half the black beans with cooked onion in medium mixing bowl. Stir in remaining beans. Place bell peppers in slow cooker; spoon black bean mixture into bell peppers. Sprinkle cheese over peppers. Pour salsa over cheese. Cover; cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. On that, some black beans from a can (drained and rinsed), corn from the freezer cooked just until barely done, green onions on that, maybe a bit of shredded cheese and maybe not, and a little sour cream. I used to put pico de gallo on something like that, but it looks like tomatoes are off my list for now. Soy milk on the side. To that I will add some spicy smoked tofu and light miso dissolved in a bit of water and heated until warm. I will then cook some soba noodles and serve the sauteed mixture over the noodles.
