Guest guest Posted December 4, 2009 Report Share Posted December 4, 2009 In a hurry and craving cheese: I tossed one 16 oz bag of pasta in boiling water. While waiting, I mixed 2 cans of diced tomatoes and 1 can of tomato paste together in a bowl. Then I added italian spices like oregano, basil, garlic...salt. When pasta was almost done, I threw in a small container of baby spinach leaves (2-3 large handfuls) (could have done more; my children tolerate it in small doses). (The spinach cooks in the pasta water for just a couple of minutes). I drain pasta/spinach and put in large mixing bowl, then added 1 small container of ricotta cheese and mixed well. Then I added 3/4 of the tomato mixture to the pasta/spinach/ricotta. Poured all of the large mixing bowl into a sprayed lasagna dish, poured remaining tomatoes on top. Then emptied a small bag of mozzarella cheese over the top (all about the craving!). Baked 350 for 30 min. ('til cheese was slightly browned). I think this recipe came from Kraft.com - i use it regularly and need to change it up a bit. Wondering how many other veggies I could add to this... finely chopped mushrooms?
